Tropical Ambrosia

Apples, celery, and nuts with oranges, shredded coconut and fruit juices!

  • 1 cored and diced Gala apple
  • 1 Tbsp. orange juice. Reserve an additional 1 tsp.
  • 1 thinly sliced celery rib
  • 1/4 cup chopped and toasted pecans
  • 3 Tbsp. reduced fat sour cream
  • 2 Tbsp. low fat mayonnaise
  • 1 Sugar Twin® Sucralose Sachet
  • 1/2 cup drained mandarin orange sections
  • 2 Tbsp. unsweetened shredded coconut
  • freshly ground pepper, sprinkle to taste (optional)


Toss sliced apples in a mixing brown with one teaspoon of orange juice, celery and pecans. In another smaller bowl, whisk the sour cream, mayonnaise, SugarTwin® and orange until thoroughly blended. Sprinkle a few pepper grinds in, and then add the dressing to apple mixture. Dry off the orange pieces with paper towel a little bit, and add them to the bowl. Toss and dress, garnishing with coconut. Chill if desired.
