Chocolate Chip Blondies with Pecans

Blondie’s with pecans and chips – yummy!

  • 8 Tbsp. softened unsalted butter
  • 1/2 cup Sugar Twin® Stevia Granulated White Sweetener
  • 1/3 cup sugar
  • 1 large egg
  • 1 Tbsp. unsulphured molasses
  • 1 tsp. vanilla extract
  • 1 cup unbleached all-purpose flour
  • 1/2 tsp. salt
  • 1/2 cup chopped pecans
  • 1/2 cup chocolate chips, preferably dark (63%) chocolate


Preheat the oven to 350° F. Apply cooking spray to a medium-sized cooking pan, and align with 7X15 piece baking parchment. Lightly spray the parchment with cooking spray, and in a mixing bowl beat the butter until fluffy with a hand mixer. Add SugarTwin® and also regular sugar, and continue to beat for 45 seconds. Then add the molasses, eggs and vanilla and combine everything by beating another 45 seconds; You will see small lumps. Mix in salt and flour, and nuts and chocolate chips. Batter will become thick. Spread the batter evenly in the  baking pan  and bake for 40 minutes, or until a fork comes out clean. Allow to cool for 15 minutes, then lift from the pan and cool the Blondie's completely on the parchment paper. Cut into squares as desired.
