Apricot Bars with Chips

Fruity apricots and chocolate chips together!

  • 1 cup dried apricots
  • 1 cup water
  • 1 cup Sugar Twin® Sucralose Granulated White Sweetener. Reserve an additional 1/4 cup; divided
  • 1 cup flour
  • 1 3/4 cups quick cooking oats
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/4 cup vegetable oil
  • 1 cup semisweet chocolate chips


Preheat oven to 350°. Spray a medium to large, nonstick baking surface with cooking spray. Combine in a saucepan the apricots and the water, set on heat and slowly bring to boil. Reduce heat and simmer for 15 minutes, then remove from stove to cool. When the apricots are cool, puree them in a food processor and slowly add ¼ cup of SugarTwin® into mixture. In a large mixing bowl, combine the flour, oats, left over 1 cup SugarTwin®, baking soda and the salt. Add ½ cup of  apricot puree and vegetable oil. Stir until evenly moist and crumbly. set aside 1 cup of this crust-mixture for topping. Press the remaining crus, mixture into a greased baking pan, and bake for15 minutes. Allow to cool for 5 minutes, then spread the remaining apricot puree over the crust; garnish with chocolate chips, and sprinkle the left over crust-mixture over the  chocolate chips. Bake another 15 minutes, cool and cut into bars and enjoy!
